mango chutney + avocado = yum

Sometimes it's hard to figure out what to make when your fridge/pantry only has a few ingredients. The other day my food stash was looking a bit measly. The most interesting things I had were some mango chutney and an avocado that had been ripening on the windowsill for the perfect amount of time. Without knowing what to make for lunch, I combined these two things on some white toast, and it turned out surprisingly delicious. The sweetness of the mango brought out the sweet, unique taste of the avocado so well, while the crunchy texture of the toast cut through the creaminess of the avocado. I love surprises.
