Maple nut granola

Mmmm, granola. Pair it with some yogurt and fruit and you have a filling, nourishing breakfast or snack. With granola, you can use any nuts, seeds, and dried fruit you want so you have a lot of freedom with it.

1. Preheat oven to 275 degrees.
2. Combine the following in a large bowl:
  • 5 cups old-fashioned rolled oats
  • 1 cup unsweetened coconut flakes
  • 1/2 cup brown sugar
  • 1 cup chopped nuts (I used 1/2 cup sliced almonds and 1/2 cup chopped pecans)
  • 1/2 cup seeds (I used 1/4 cup sunflower seeds and 1/4 cup pepitas (pumpkin seeds))
3. Combine:
  • 1/2 cup pure maple syrup
  • 1/2 cup water
  • 1/2 cup canola oil
4. Pour the maple syrup mixture over the oat/nut mixture, and stir until well combined.
5. Spread the mixture into a large roasting pan or rimmed baking sheet.
6. Bake for 35 minutes. Remove from the oven, stir, and bake for an additional 30 minutes or so, until golden brown and beginning to crisp. Remove from the oven and let cool in the pan.
7. Mix in 1 cup of dried fruit (I used 1/2 cup cranberries and 1/2 cup chopped dried apricots).
8. Store in an air tight container.
9. This makes about 10 cups of granola, so share it with your friends :)
